Good for you for not quoting......if I do charity items I make sure the customer has written proof of approval along with a phone number to call to verify it's genuine. If that comes out as genuine I can then assess if I can drop my margins. If I can I then quote a lower price, show the 'normal' price and try to ensure the charity benefits from my lower pricing.
