do you do that on layers or only on one pic???

Try in the history and drag and drop last edit into bin - as Paul said, you could create a duplicate layer and work on that.

I did it on he pic - next time I'll do it over a layer

How can I put a bit of colour back on a bit I didnt mean to make black/white?

Start again but after doing the selection check it in quick mask (2 buttons under the black n white colour picker) you'll see any mistakes and can use the eraser or paint brush to correct your work then click out of quick mask to reveal a perfect selection.
