Unless you're running more than one website and/or you need more control over the server, I don't recommend a VPS just for hosting a website. I run a VPS because I host several websites and so that I can control which versions of PHP/MySQL/Apache I'm running.
I've never used EKMPowershop and I don't really know what it is, so I can't make any comparisons. Near as I can tell, EKMPowershop is the shallow end of the pool where you get your feet wet; a dedicated server is the deep end where you drown; regular hosting is nearer to the shallow end, while a VPS is nearer to the deep end.
If EKM is a little too inflexible for you, I would think you want to seek out regular hosting that has the requirements to host OpenCart (or whatever shopping cart platform you decide on).

My old ZenCart version is still (temporarily) online at - http://www.mugsandgifts.co.uk/zshop/index-zen.php (although I've set up a redirect so all links will take you to the new site), but you can get an understanding of what it used to look like from that. I've left this online but in maintenance mode just in case OpenCart failed on me for some reason (wouldn't take a second to turn ZenCart back on).
