We tend to run adverts when we have a sale offer on - usually one day half price sales on either a range of products, or a single product, and opt for exposure to people who haven't already liked our page, and/or friends of those that have.
Although the FB analytics are interesting to see, the measure by which we know it has worked is that we get more actual sales - we know our products sell well, and we know they sell better when we half the price, and they sell the best if we advertise when they are half price. (i.e. no point having a flash sale is no one knows it's happened - people love a 'bargain') We tend to do these on our lowest cost, but highest margin product, which is also one of our best sellers anyway.
