I am using Subright premium quality sublimation paper, when I go to print I only get options for these type of papers,
Which should I say I'm using please? also should I always print in the highest photo setting please?

As far as using the printer for non-Epson inks, the paper setting is essentially telling the printer how much ink to use to print with- a cheap photocopy paper is not going to cope with much ink being sprayed onto it, wheras an expensive matte paper will take a lot.
Depending on what you're printing, different ink levels can work better than others - we've found cheaper mugs blur/ghost after printing with too much ink used, wheras our normal mugs cope fine. Fabrics are obviously very absorbent in their nature so can absorb more ink too. (Maybe substrates which are made of polymers rather than coated have a better chance of taking more ink in?)
The amount of ink your paper can take will depend on the quality of the paper you are using - just because it has been branded as "premium" or "quality" doesn't mean it actually is mind. It depends on the thickness of the paper itself, the amount and type of coating on the paper, and what the paper was intended for - was is specifically made for hard substrates, or fabrics, or both,was it made for older/slower printers, or newer/faster ones, whose ink was it designed for etc etc.
The other factor is the ICC profile you use will be not only dependant on your printer model, and inks used, but the transfer paper you use, as well as the media type and print quality settings used. So you need to be asking who made/provided the ICC as to what it was made for in terms of these things.
We make our own ICC profiles, and I like to use a lot of ink (we have a good source of inexpensive inks) to help give deep saturated colours on some of our products, and also to help with getting a good transfer onto various fabrics, and so use the printer on Enhanched Matte paper setting, on its highest quality for hard substrates, and lower quality for fabrics.
Your best bet would be to start with the highest ink level setting (usually the top one on the drop down list) and work your way down until the paper isn't wet when it has finished printing, and the paper lays flat without any noticeable ripple effect (cockling) We push our paper a little too much so it cockles a bit, but not too much that there are any problems with the resulting transfer.
